I did my family's Christmas Eve dinner. I decided to go untraditional and cook foods from countries around the world. I'm not a great cook but it was a great success.

Here's what I made:
-Chicken Tortilla soup (Mexico)
-Chicken Tikka Masala on a Basmati rice (India)
-Homemade pizzas on pita bread (Italy)
-Macaroni salad (Italy?)
-Potato salad (Germany)
-Chinese Fondue (China)
-Greek potatoes (Greece)
-Olive appetizers (Greece)
-Chorizo sausages (Portugal)
-French Baguette and French cheeses (France)
-French Canadian Tourtière (Quebec, Canada)

For anyone with young kids, this will go down well:

Dippy Eggs and Soldiers

Ingredients
2 farm fresh, organic eggs
2 slices of toast
Butter
Salt and freshly ground pepper, to taste

Method
Place eggs in a small saucepan. Fill with water about an inch above eggs. Bring to a boil. Once boiled, turn off heat and cover for 3 minutes. With one minute left, toast your bread. When the 3 minutes is up, with a slotted spoon, carefully place eggs in prepared bowl of cold water to stop egg from cooking. Butter toast and cut into soldiers (about 2 cm thick). Place eggs in egg cups and use egg cracker (my new favorite kitchen gadget) to open. Or simply, lightly tap the tops with a spoon to crack the shell, then scoop or cut off the top 1 cm. Sprinkle with a pinch of fleur de sel and pepper, if desired. Serve and start dipping immediately.

I was away from home for like three weeks, eating in crappy small town restaurants, so today I made buffalo chicken mac and cheese (with bacon!). It may possibly be the most ridiculous thing ever, but it looks so good I am tempted to start worshiping it as my new god.

Last night:

Apple Crumble

Image

Ingredients:

For the crumble

300g/10½oz plain flour, sieved pinch of salt
175g/6oz unrefined brown sugar
200g/7oz unsalted butter, cubed at room temperature
Knob of butter for greasing

For the filling

450g/1lb apples, peeled, cored and cut into 1cm/½in pieces
50g/2oz unrefined brown sugar
1 tbsp plain flour
1 pinch of ground cinnamon

Method:

1. Preheat the oven to 180C/350F/Gas 4.
2. Place the flour and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs.
3. Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon. Stir well being careful not to break up the fruit.
4. Butter a 24cm/9in ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top.
5. Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling.
6. Serve with thick cream or custard.

Yeah, it still has one (or two) unsightly little pockmarks, but there's no giant fault line running through the middle. This is huge, I'm so happy I could cry.

It's a cheesecake btw.

Steak is hard to fuck up if you can afford the good stuff. It's also ridiculously simple to cook, and it has that classy feel. Steak, mashed potatoes, something green (asparagus, green beans), simple pan sauce, you're golden. Deserts are hard, baking's like chemistry, despite my ridiculous cheesecake success up there (so proud, you don't even know) it generally fills me with a preternatural dread. Trifle's a good choice cause that's more about assembly than actual baking, so you don't have to sacrifice anything to the pagan gods to ensure it turns out right. I can be more specific and find you some recipes if any of this sounds good.

Chicken Piccata with Orzo

Seriously easy. You could use rice or any small pasta instead of orzo and add in ingredients (peas, mushrooms, artichoke hearts, tomatoes, olives, whatever) to the sauce. Just make sure you get small chicken cutlets and not monster chicken breasts because big ones take way longer to cook. It's pretty easy to cut in half for 2 people, or you could just make the extra into a pasta salad or something the next day. If you don't add veggies to the sauce, serve it with a salad.

As far as dessert goes, a really nice, stupid easy dessert is homemade whipped cream with fresh fruit. Here's a how-to: http://lowcarbdiets.about.com/od/cookin ... dcream.htm Chop some mint and sprinkle on top for a fancier look.

Certainly great suggestions, the only problem being I doubt we can afford the good stuff. :P I'm sure he's more picky about these things than I am, anyway, since I'm not huge on steak myself. Still, it's a possibility. Mostly going for simple & cheap, though.

Another even cheaper chicken tip - pick up drumsticks (2 or 3 each) and make a sauce with 2 tablespoons of soy sauce, 2 tablespoons of honey, and 2 teaspoons of chile sauce like Sriracha. Coat the drumsticks in the sauce and bake at 375 for about 50 minutes (check the chicken around 45 to see if any pink remains). Serve with white rice and sauteed broccoli with garlic.
