A+ rouxing advice. (I tend to think of it as, add an amount of liquid roughly equal to what's already in the pan at each stage.)

Oooh, I bet fontina makes for a nice nutty, creamy flavor.

Based on the cheeses, I think my preference runs toward something a little sharper, but you've already brought up the most important aspect in that regard: tweaking. Macaroni and cheese is more about nailing down the basics and then improvising on what suits your own palette. Building a roux into a Béchamel is probably the most important skill involved, and from there it's just a matter of dumping in the spices, cheeses and pasta and cooking it all in the manner that best pleases you. If you like something super-creamy without a crusty contrast, a stovetop version will even get that done without the baking.

But just one rule of thumb on pasta: Cut the package-recommended boiling time for al dente pasta by about two minutes. It will do the rest of the cooking either on the stovetop or in the oven.
